Single physical or multiple virtual SQL Servers?

Currently, our system has one big physical (dual 8 core Xeons, 128 GB of RAM) SQL 2008 server on Windows Datacenter 2008 R2, and it performs like a champ. It's currently hosting our vCenter, EMR, Patient Portal, and a few other DBs.

However, when I look forward, we're looking at upgrading to Server 2012 R2 and SQL 2012 probably next year. (Can't do 2014, not supported) I see that single server as a single point of failure. We have a spare blade, but we don't have the licensing to turn it on as a VMWare Host. Since the RAM limits have disappeared for Enterprise, we're hoping to save quite a bit of money on that transition. The other option is the move to multiple SQL servers, and move our vCenter, Patient Portal and other DBs to their SQL A and move our EMR server to SQL B.
