Backup and Restore conundrum

We are migrating our back-end software, and need to upload our database to our new provider. However, we don't want to have any downtime (or the bare minimum possible). Our DBA's use RedGate backup internally, and we need to upload a SQL native backup.

I need a sanity check on the current plan (no clue who came up with this plan, or if it's just an idea at this point), which I gather/assume/intuit is something like as follows:

  1. Restore RedGate's Full backup to a temp server. This is a daily full backup which will happen on Sunday morning.
  2. Sanitize some info from the database.
  3. Create SQL native full backup, and upload that to new vendor (about 13 hours to upload)
  4. New vendor will import the database to their system
  5. At the end of the sales day on Sunday, take a RedGate differential backup of the database (this will contain all...
