Monitor SQL Server Activity

Hello,

I have an ERP system that runs on a SQL Server 2014 database.

I would like to find some way to determine what is trigger in SQL Server and what tables, and ideally, what fields are affected when a user preforms an action from the client software.

I would perform this monitoring during off hours in order to reduce as much noise as possible.

My first guess is that the SQL Server Profiler is the way to go but was quickly overwhelmed with the amount of information that is captured.

I was wondering if there are any other products out there that can do what I'm looking for or any advice with using the Profiler to help reduce the noise.
