MS SQL 2005 setup on Virtual Server

I'm going to be setting up a MS SQL 2005 server on our VMWare installation. I'm looking for thoughts on drive setup (the actual disks on the virtual machine). There seems to be a couple of different thoughts, at least on paper, but I wanted to get some thoughts from people who have actually done it.

The two thoughts I've found are:

- Just put in one big drive with the virtual machine

- Create iSCSI connections to your SAN storage (what we have...15K drives).

My hope is that this will be our primary database server (yes I want to get upgraded to something a bit more recent, but this will be a first step to get away from MS SQL 2000!). I'll have to get more specifics on the exact type of databases and loads, but in general what's the preferred method for this type of setup. OS will be windows server 2008 R2.
